My cayenne has been looking really droopy ever since it started growing peppers. I have 6 on this plant of various sizes. I water about one a week and the temp is constantly over 70⁰. I have a strong grow light and it was doing great before the fruiting.

I would give it more water. I usually water every 3 or so days.
Cayennes are really dramatic. They will do this as soon as they are thirsty. For all other peppers I do the lift test. For cayennes as soon as I notice any droop I water. I get about 100+ peppers from each indoor cayenne under lights and I grow tons outdoors too. Such dramatic peppers.
Water when needed…never on a schedule. Peppers are VERY susceptible to inconsistent watering issues. If you can’t tell by the finger test whether your pepper plant is moist or dry…pick up a cheap water meter probe. Check it daily. Watering once a week is rarely enough for a pepper plant especially indoors with lights.
You want consistently moist soil. The consistency of used coffee grounds. Goldilocks soil. Not too wet…not too dry. If you were to take a handful of soil…and squeeze…you want it to barely hold together. If it drips water…you’re over-watering. If it crumbles through your fingers…you’re under-watering.
Inconsistent watering causes nutrient deficiencies and can make them more susceptible to pests and diseases. It also doesn’t allow your plants to absorb and utilize nutrients efficiently. Stressing your plant by allowing it to go completely dry and wilt before watering will only cause your plant to be unhealthy.
I’ll attach a video that many find helpful.
