I had it in water for ages and it had a good amount of roots, and it was a piece of stem with a leaf on it, which I think is supposed to be enough to grow a new plant from it. I put it in soil already like a year ago after having it for several months in water. It's not showing any signs of going beyond the current stage, does this mean it just doesn't have a node?

Patience, they take time. I also have one with just one leaf and it’s been almost 10 months, I now see a tiny bump forming for a new leaf.
Give ample of sunlight and water thoroughly when 2-3 inches of soil is dry. Try npk fertilizer if you want but not necessary.

She’s still green which means it’s doing something.
