Countless times I’ve thought I have one more day before I need to zip that zucchini only to come out to realize I made a terrible mistake.

They do grow overnight. There used to be a time-lapse video of one. It was amazing. I’ll see if I can find it.
But it’s not a good idea to allow them to mature to that large. Cucumbers and squashes have 1 purpose in life…to produce seed to ensure the plant’s survival. Sometimes by allowing your zucchini to grow that large…the plant senses that it has done its job…and stops producing. Picking zucchini at just ripe or underripe will tell the plant to keep producing more.
Just ripe zucchini also has better flavor. Overripe zucchini can be either bitter or flavorless. That’s why most people use large zucchini for making bread.

They like to hide. Don’t listen to all the people who will tell you it’s ruined. That thing is perfect for stuffed zucchini.

I’ve learned those aren’t the best for eating, even cooked as spirals in place of pasta, coins as ratatouille-ish. I see someone says ‘stuffed’ is good……will have to look into that!
