It’s one of 2 other plants grown together in the same pot. Now that I’ve observed the other 2 remaining, the stem structures look similar in that they’re probably gonna be bolting soon too so it’s probably overcrowding that did it

    You can get another week or two out of them by snipping the flower stalk, but they get bitter after they go into flower mode.
    You should selectively harvest big bottom leaves off several plants early (around 3 weeks old IIRC) they’ll grow faster than if you wait around for a nice “head” same with lettuce and chard.
    Temperature has a lot to do with how soon it bolts, i always plant 2 or 3 in each netcup anyways since the roots get everything they need

    Had the same crowding issue in my hydroponics setup-bolting Bok Choy all around. Giving them more space made all the difference. Root neighbors need some alone time!
