I’m 5b (Milwaukee, off lake breeze factor). I’m guessing you are warmer climate? The only thing I might be able to harvest is lettuce if started in early April and transplanted with no issue

Easy to grow even in a small space, many varieties, so much you can make with it and the whole plant is edible makes reddishes one of my favourite veggies. I even use the scraps to make vegetable stock.
