Roasted Butternut Squash Noodle Soup

Roasted Veg:
3 onions, peeled and sliced into roughly 1 inch pieces
1 small butternut squash, peeled and sliced into ¾-1” cubes
1-2 t. Chili powder
4 cloves garlic
2 sprigs fresh thyme leaves
Drizzle of olive oil  

Soup:
2 T. olive oil
4 garlic cloves, sliced
3 sprigs each: rosemary, sage,thyme (adjust to taste- I only use 1 sprig of sage)
1 parmesan rind
6 cups chicken broth
2 T. sherry vinegar (I used 1 T. cooking sherry + 1 T. rice vinegar)
Zest from one lemon
Juice from ½ lemon
8-10 oz. short pasta
6 kale leaves, stems removed and sliced
½ c. heavy cream
⅓ c. grated parmesan cheese
s&p

Preheat oven to 375 F. Mix all veg ingredients. Spread evenly on baking tray. Bake for about 18 min. 

Add olive oil to dutch oven set on medium-hi. Add sliced garlic, fresh herb stems, s&p, & parmesan rind. Cook for a few minutes. Let flavors infuse, watch the garlic, so that it doesn’t burn. 

Pour in chicken broth, lemon zest, lemon juice, vinegar, and s&p. Cover. Let simmer for a few minutes. Remove lid, remove herbs, add pasta. Cook to al dente. Add kale and cook for 2 minutes. Remove from heat, stir in roasted vegetables, heavy cream and grated parmesan. 

Serve right away with freshly grated parmesan, black pepper and a drizzle of olive oil.

  1. Are plants like creeping thyme edible or just ornamental? like pears and weeping cherry trees? I have no experience with herbs (no luck with leafy greens and berries either, hopefully next year)

  6. Happy birthday Samantha! I a so addicted to Spring although we are getting this huge arctic storm coming this weekend and freezing cold thru next week, I know Spring is near I am in Sw. Virginia, and in a 165-year-old house. I just want everyone to be warm and not lose the electric power with ice also predicted.

  7. What a sweet set up for Samantha. I’m a grandma of 4 beautiful grandbabies ages 3-12 years old. My daughters and I throw huge birthday parties that are themed. I rent a venue and completely decorate the entire space from florals, bounce houses, games, huge backdrops with balloons, a face painter, awesome goodie bags, and catered meals. Every child and parents from their class are invited to come have a fun filled day and every child goes home with a present and a goodie bag. Past themes were construction, woodland, police officers (actually had officers come and children got to be inside the cruiser, dinosaur, carnival, slime, and 6 & 7. I go all out with decorations and activities, the children and parents absolutely love these parties, and everyone has a blast! I hope my grandchildren will always remember these birthdays and hope it gives them special memories.

  9. Happy Birthday Samantha 🎉, Laura do you keep your Amaryllis bulbs once they have flowered and store for next year? If you do how do you store them, I bought a lovely one this last December in memory of my mum who just died and its been flowering since Christmas 2 spikes with several blooms on each one and I would like to keep it for next season

  10. The soup was delicious. I think I missed a step though. Do I cook the pasta prior to adding to broth? It was still good but I didn’t cook my pasta long enough ! 😂. Thank for sharing this delicious soup my family loved it. And I used rosemary and thyme from my garden. My grocery store didn’t have fresh sage so I just sprinkled little of the dry one. Loved it. We will continue making this soup 😊
