    Bitter melon, one of my favorite vegetables. I grow them every summer.

    Bitter gourd. If you are planning on cooking it, cut it into thinnish rounds and soak it in salt water before cooking it. This will help reduce the bitterness a little. We made a stir fry of this vegetable with some spices in India. Some people love it and some people hate it.

    Well know in many Asian cuisines.

    My mom cooks them in various ways – shallow fried to crisp, stuffed with spices, thinly sliced chips with some unrefined sugar and onions.

    Lots of seeds inside, making it hard to get used to but it is very good for blood sugar and for digestive health

    fwiw if you ever find real unknown squash type plants that are bitter, do not eat it, it can cause Toxic Squash Syndrome (TSS) or cucurbit poisoning.

    You should do a bitter melon chicken recipe with that. Black bean sauce, savory, bright and fresh with the melon, and pretty healthy. It’s one of our favorite recipes and we make it all the time with family.

    Bitter Gourd – Karela in Hindi 🙂 We cut it into thin slices across and marinate with spices and put them in the airfryer with a bit of oil. Soaking it in salt water before cooking can make it less bitter 👍🏼

    Bitter melon. If you don’t prepare it properly it will taste very bitter. I honestly don’t really remember other than the bitterness when eating this.

    Slice it thin after removing seeds in madoline slice. Cook similar to fried chicken recipe.

    It’s so wild to me that this is a commonly eaten food. I have tried eating it, cooked by a restaurant, and I love bitter foods, and I could’t finish it. The bitter get so bright and piercing it almost makes me shudder to think of it. Maybe the meal wasn’t prepared right, or maybe my bitter tolerance is way lower than I think. 

    I’m glad people like it though, especially in a world that can be so devoid of bitter flavors.
