I found a single seed in a store-bought fuyu persimmon that I was eating. I was planning to stratify it in the fridge for 12 weeks, so I placed it in water first to prepare it. I forgot about it for several days and today I noticed this.
This is a root (or shoot), definitely not fungal growth.
This is germination for sure, no? How is this possible without stratification?
This was a store-bought fuyu persimmon, and these have typically been seedless.
Just plant it in a deep pot. It will grow a root and then later in months grow a top.

I once heard that if you are not sure which is the root, plant it sideways and each side will find its way up or down the soil/ground

Stores often keep fruits refrigerated until they put them out in the produce section, hence why stratificat isn’t always necessary for seeds from grocery bought fruits.

Grocery store fruit comes pre-stratified. I get produce scraps and culls from the store in town to feed my pigs. Almost all of the fruit seeds will have started to grow a little root. It’s generally not worth the time to plant them though. Most of the fruits you eat will not grow true from seed.

Does persimmon seed from a good fruit grow well? Or is it like apple trees?

Yes, definitely germination. As for the how/why? No way to know what the persimmon went through before it got to you since it was store-bought. Just accept the sprout as a gift!
As one other poster noted, it might not produce true to type. I have no idea how hybridized commercially available persimmons are, but I suspect that they are hybrids rather than heirlooms (or else they probably wouldn’t survive transit). Whatever fruit that sprouted seed produces, if it grows into a mature tree, might not look or taste the same as the one you bought.
Plant it anyway and see what happens!

Just keep in mind its a hybrid. So you’re not getting a fuyu from the seed. Worth a fun experiment though I guess, but dont be surprised if they fruit isnt tasty.
