Do you have to water them, I have them under hoops and leaves. Do you think garlic would do any better under hoops?

Up North here in Idaho and we still have carrots and potato growing right not, November 18’ 2025. They are doing well and still tasty.
This sounds like a complete bullshit to me. Potatoes for sure would die off if covered with a tarp and waited down and then start to rot.

This only works in some northern states. Here in the south the temperature swings and rain would just make the vegetables rot.

I've heard this so many times but for some reason, i always forget and harvest them…
Maybe not in Alaska. The ground freezes deeply here. Potatoes and carrots turn to mush after freezing solid. Ask me how I know.
This doesn't apply to sweet potatoes either. They are not adapted to survive a frost, and your first frost will ruin them and cause them to rot.
