Zuppa Toscana
Ingredients
•6 oz thick-cut bacon (4–5 slices)
•4 cloves garlic, minced (or 5 😜)
•1 medium onion, diced
•2 lbs russet potatoes, peeled & sliced
•1 lb hot Italian sausage
•½ tsp kosher salt (plus more to taste)
• 5 cups low-sodium chicken broth
• 1 bunch kale (about 8 oz), torn
• 1½ cups heavy cream
• Fresh cracked black pepper & salt
• 1 tbsp smoked paprika
• 1 tbsp red pepper flakes
How to Make It
1. Start with the good stuff — bacon.
Crisp it up in a big Dutch oven, then let that golden bacon fat work its magic.
2. Brown the sausage.
Add your hot Italian sausage right into that bacon fat. Break it up and let it sizzle until beautifully browned. Remove and set aside.
3. Get those aromatics going.
Toss in your onions and garlic. Let them sweat until your kitchen smells irresistible.
4. Add potatoes + broth = magic 🪄
Stir in the sliced potatoes, coat them in all that flavor, then pour in the chicken broth. Simmer until the potatoes are soft and tender.
5. Finish with the cozy touch.
Rip in your kale, let it wilt, then stir in the heavy cream off the heat. Add bacon back in and hit it with fresh pepper.
6. Serve it up warm.
