Uff. Start by cutting off any roots, mini or broken tubers..any that you think wouldn’t be viable. Then just start in the top and work your way through. I always try to be extra carful with the best of the bunch, then sort of hack through the rest.

On big mamma jammas like this I like to go around the outside and take off as many viable tubers as I can, and then use a serrated kitchen knife to separate whatever is left. It’s easier for me to get in between stalks with a knife than with snips when they’re this big. Good luck!
