Lemon Icebox Cake

6 oz. Cream cheese, softened
3/4 c. Powdered sugar
2 1/2 c. Heavy cream
Zest of 3 lemons
2-3 T. Lemon Juice
1 (or 2) box Nilla Wafers
1-2 c. Lemon curd

Cream the cream cheese and powdered sugar together until smooth. Add lemon juice to taste.

Add heavy cream and continue to mix until medium peaks form. Fold in lemon zest.

Spread a little of the cream mixture onto the bottom of a 9×13” pan (to prevent cookies from sliding around). Cover with a single layer of Nilla Wafers. Top cookies with 1/2 of the cream mixture, then 1/2 of the Lemon curd mixture. Repeat layers: cookies, cream, then curd. Top with extra cookies.

Freeze for at least 3 hours or overnight.

You can freeze for up to one week.

  1. Regarding the lilies and the toxicity, I’m kind of the same mindset as you Plant it and our animals just figure it out. However, chickens are kind of another story, they pack and try everything so I guess they would be the only thing I’d worry about, but it still wouldn’t stop me from planting them. Can’t wait to see those in bloom. I planted lilies for the first time and were very impressed. Make sure to follow up next summer so we can see those beautiful things.

  2. I had a large garden filled with Asiatic Lillies when the Lillie Beatle found it and destroyed them so sad. Have you ever had a problem with them?

  5. Buff Orphingtons are the sweetest hen breed.. we had one and sadly lost her too soon. If we hadn't helped out a friend with their hens needing a new home I would have gotten more of that breed. 💕

  7. I was a little surprised to see that you don't divide your lily bulbs. I divide mine every few years just like iris so that they don't slow down the flower show.

  8. The 'girls' were inspecting your planting of their ferns under the tree. Plenty of room for all of them now. I'm sure they approve!

  10. Strangely enough, despite the name icebox cake, these cakes don’t usually go into the freezer, because it’s not classed as a frozen dessert. Historically iceboxes were refrigerators (boxes with a block of ice with a door). The ice kept things cold but not frozen.

  11. I lost the leader to my black hills spruce last winter here in MA…..It was exceptionally windy…..and it sustained a couple months. This spring and summer it assigned a new one. It grew in quick…..Let it be for now…..I know you would without me saying that. 🙂 We will all be surprised next year at what it may do.
