First time growing them. And probably left them in a bit too long. But yay, sweet potatoes! No what? How do I store these guys? I’ve heard they need to cure or settle before being valse to consume them?

    I haven’t done this personally, I’m just googling for myself out of curiosity, so anyone else with more experience can feel free to correct me

    While you can eat them out of the ground, it’s probably a good idea to cure them for long-term storage; put them in a warm and humid place (like a plastic bag in a sunny window) for one to two weeks until the skin gets firmer, then put them in a cooler drafty place for six or so weeks to fully cure them. Any of the potatoes that get softer rather than harder should prolly be composted

    Without cleaning them, put them in a box layered in straw in the dark in cool dry place for a couple weeks. I put mine in a bottom shelf in a cabinet in my garage. The store pretty well this way.
