Spry was celebrated for her bold floral compositions that combined garden clippings with household objects – a symbol of creativity and curiosity that redefined British aesthetics.
It was Spry who famously devised the Coronation Chicken recipe for Queen Elizabeth II’s coronation luncheon in 1953, a dish now considered an afternoon tea classic. Montcalm Mayfair’s new experience reimagines this heritage through a modern botanical lens, blending floral artistry with culinary craft.

The menu, crafted by Head Chef Roger Hutchinson, highlights signature creations such as Matcha Opera Cake, Dressed Crab Brioche Rolls, and a sophisticated Coronation Chicken Sandwich reinterpreted for the modern palate.
A charming children’s afternoon tea menu adds a playful touch, offering whimsical sandwiches, sweet treats and creative drinks that make the ritual inclusive for families.
