I’m no expert but I could not understand why they wouldn’t be

If you want to eat them as yellow wax beans, (pods & beans together), then yeah, a little late. Looks like the pods would be too dry.
The beans are still edible, but dunno how they’d taste. Perfectly safe though. Butter & salt makes everything taste good though 😉
You could also wait longer & let the beans completely dry on the plant for dry beans & seeds next year.

You could probably eat them if you desire. Might be best in soups if they are a bit tough.
I planted Cherokee Trail of Tears bean, which can be picked young as a snap bean or left to mature for dried beans. I plan on using the ones I left to dry as a base for winter chili and soups.
I believe the Cherokee wax beans can be dried as well for later use.

Plant them for next year

As long as they are still soft, just shell the pods like peas and cook them. Fresh shelled beans are super tender and yummy.

yes they are safe to eat
They’re a “dry bean” even if they’re not completely dry meaning the sugars are now starch so treat them as you would any other dried bean. They’d be rather nice in a chili.
The last of my beans are about to be harvested for storage and next years seed they’re almost at the required moisture content.
