Red. Then I smoke them and dry them if I don’t use them right away. Any green ones at the end of the season will go in the gärtopf to ferment for sauce.

I didn’t know this until just this summer – but the redder they get, the spicier they get. So pick them green if you want a little less heat and let them redden if you want more kick. The redder the hotter.

Whenever they start getting too heavy for the plant, I just give them away usually because I don’t eat them much even though I’m Mexican

Both. I make hot sauce out of red and also green jalapenos. The difference is amazing. Red fruity, green slightly tangy. Good stuff!

In my experience the longer you wait to pick them the more potent their heat.
One time we used up all the jalapenos at once for stuffed jalapeno poppers. They ended up being so spicy we couldn’t eat them lol.

I personally like jalepenos picked earlier bc they seem to be softer I guess is the word then let turn red off the plant. Mine always seem to get woody really fast though. Also I just like them to be red idk why
So basically just before they get woody. You can see in yours it’s turning slightly woody by the small little cracks I think. I know some people do it for different levels of heat but I also personally like the roll of the dice of not being sure how hot they are
