All right, folks. Ricky Mills here again with another gardens, not wild edibles, but edibles video for stuff that you don’t normally eat. Today, we’re talking about beet greens. So, my beets are doing amazing right now, but some of the leaves are starting to touch the ground, like this one here, and all that’s happening are the snails are kind of getting to them. So, what I do is I I’m pulling some of those So, we’re going to do the same thing today that we did the other day with the radish greens. I’ll put that link in this video for you to check that out if you didn’t see our radish greens video. We’re going to go to the kitchen and make a quick omelette with some beet greens. So, all we did was wash them really good, make sure there’s no sand or grit on them from the uh garden, and then we’re just going to chop just like we did with the radish greens. Chop them up. Get prep them. Get them ready to go in the pan. I’m frying up some sausages right now. Some breakfast sausage. And the grease from the breakfast sausage is going to add to the flavor. We’re going to remove the sausages. And these are your standard maple breakfast. And then we’re going to add the beet greens. for that. Dump in my sausage. It’s not an omelette. It’s more scrambled eggs with sausage and my beet greens. And again, this is this recipe is for you to stretch your garden out. It’s to maximize the use of everything in your garden. It’s a keeper.
