Haven’t tried it before but apparently there’s a green pepper powder, similar to paprika but just with green ones. I don’t know what the flavor profile is like though.

If they are massively undersized I will just toss them in the compost. However green peppers are delicious in many things.
Salsa verde is a great one.
Chili is another.
Aji Verde can be made with any pepper of your spice tolerance.
They can honestly be used in most recipes that call for fully ripe peppers. The taste is a little different but still usually very good.

I’ve made a green hot sauce with whatever I had left over. Or I chop and vacuum seal for the freezer, and add them to meals I cook all winter/spring.

Eat them. Freeze them. Pickle them.

I’ve used some of my under ripe peppers as a flavoring for mead to great effect. A couple ounces of pepper per gallon of must yields a nice fruity pepper flavor with just a bit of spice.

Luckily, I’m in 9b so I keep mine on until they’re ripe. Last year I still had peppers on the vine during the holidays.
