Spaghetti sauce, quiche, and dehydrated does really well frozen. Canning them isn’t difficult but takes time. Slice them for every meal. And my absolute favorite that I never get tired of is a tomato sandwich. Cheap white bread somehow seems to make it better with salt and tons of black pepper. It really is perfection.

I freeze mine whole, and when I thaw them, I put them in a strainer so all of the water drains as they thaw out. Great for sauce and soups.

Homemade tomato soup. I won’t eat tomato soup from a can, ever. Homemade is so worth it

You can stuff them! Cut the top off, scoop the flesh out, mix with cooked rice and meat (or nuts to be veggie) and onions, season well with salt pepper and herbs and stuff back in the tomatoes then bake them. It’s really nice
