Roast them in the oven with olive oil and onions. (Garlic if you like) than put them all in a blender to make tomato soup!! Delicious. It freezes too. Add cream if u eat it right away. Freeze it with out the cream! It’s delicious
Core, de-seed, boil for like a day, can. Realize they shrink into less than 1/3 of their size and you don’t have enough. Edit, genuinely like a pint of tomato paste.

Make this recipe. It’s delicious. Use twice as many tomatoes as it calls for. Definitely use Angel Hair pasta, because being so thin, it soaks up the fresh tomato flavor.
Roast with a chopped onion and garlic at 400 for ~30 mins, add a brick of boursin when it’s out of the oven, dump in cooked pasta. White beans and/or cubed chicken optional.

Fermented cherry tomatoes! So simple to make. Ready in a few days. They are salty, zingy (slight fizz), slight sourness. I’m making a batch tomorrow.
Dehydrate into “sun dried” tomatoes
Get another bowl and make a Mickey.
Pickle, dehydrate, roast, and then freeze for tomato soup this winter. That’s what I’ve been doing.
Tomato paste
Tomato confit
I share with the neighbors. I only have sun in front so they’ve had to look at my jungle since May. I figure it’s only fair they get a taste.
Have my daily suggested serving of snacking tomatoes.

Salsa! (I used Sungolds for this batch)
I roasted them in the oven, and they are now frozen in individual batches ready to go onto my focaccia
Make some tomato confit
Freeze them whole & use for tomato sauce, soup or baked tomatoes
Tomato blue cheese cobbler for sure
If you have room in the freezer, wash and bag them then freeze. You can roast them like fresh tomatoes in the next few months. They’re delicious.
