Why you do that? Let em freeze if it will be. But they’ll shock to ripen if they don’t actually freeze

I pickled a small batch of green tomatoes, some have ripened on the counter & still taste good to me! I have 3 boxes full, I plan to pickle more of them. You can wrap them in newspaper & place in a box with space in btwn them to store in a cool place.

You got the makings for fried green tomatoes. Heck maybe try for tomato soup though I don’t know if green tomatoes make for good tomato soup or if anyone has made tomato soup with green tomatoes.

Next time try to cut them about 1~2ft higher the vine, and hang them upside down inside home.
I did it, and about 80% of the completely unrippen did ripe.
Suppose they still need to take some sun, or growing lights to fully mature

The more mature ones will slowly ripen over the next few weeks spread out with some natural light.
Not direct sunshine. Just my experience.
