Beautiful wine caps coming up for their fall flush. It’s very exciting. Wine colored. What you do is you cut off the cap, leave the stem. Look at those beautiful kind of purplish gills underneath. They have that veil, hard fibrous stem that’s going to have mycelium on the bottom, which I like to leave so the mushrooms can keep growing.
