Had this volunteer pumpkin grow, do we think it’s edible? And when might it be ready for harvest/ how will I know?

All squash are edible as long as they are not bitter. When you come to eat it, just try a tiny piece first. If it’s bitter, chuck it out, if it’s not, it’s good to eat.

As for picking it, that looks like a winter squash, so it will be ripe when the stalk is going brown and corky. This late on the year, I would just leave it as long as you can and harvest when the vine dies.

I mean anything is edible. Once.

If you havent grown it from an F1 seed or assured heritage variety, you should not be tasting or eating an unknown squash.

It is pretty easy to poison yourself with unidentified ‘surprise’ squashes.
