I'm planning a build and I want to utilize these two pieces I found. My hope is to run water through the hole of the larger piece, and then have that water pool down to the smaller piece. I have them arranged in the picture in a rough idea of what I'm planning. My question is this: Should I seal the wood against water, and if so, what should I use? (Not sure what species the pieces are, just foraged from New England woods)

You most likely don’t need to seal them. I’d personally just soak in a cooler with vinegar and water for a couple weeks to get rid of the tannins and anything bad in the wood.
