My dried Italian plums…don’t look like prunes

    Because you cut them in half. Also, most commercial prunes nowadays are plumped up with oil and added sugar.

    Put them in a glass jar with lid for a couple days. The soften up & are delish!

    I did this the first year we dried ours, too. They work better if you slice them down one side enough to push the pit out and then dry them whole. Whole prunes take A LOT longer to dehydrate (days, depending on your setup), but they retain some chew that way.

    I recently put some (Italian prune plums) in my dehydrator and they turned out just like yours. They still tasted good.

    When the prune factories dehydrate them they seem to remove the pits without fully halving the plums, so they look “whole, but pitless” and remain softer, as the interior stays moister. I also suspect they use different plum varieties than Italian prune plums.
