I’m allergic to tap water and purified water and only can drink distilled waters. Will they grow in distilled water if I add certain nutrients to it?

For me i would probably cute the edge roots over and over again to keep the plant growing without it outgrowing the jar. Make sure to cut the edges only, as it would critically damage the plant if you cut half or most roots.
I like the hydroponic system you're using, but if you add an air pump with an air stone to pump air into the roots, you will get a better crop yield
