We've owned this cactus for years, and recently he's been going mad with growth!
He's at the stage of nearly falling over, we've given him some support (as you can see) but we fear we're going to wake up one morning and he's on his side, down for the count.
What would your recommendations be for either re-potting, chipping him in half(?) or saving some of his babies?

It kinda looks like a monkey tail cactus, I have one and they are meant to hang not be straight up. I have mine in a hanging basket.

It doesn’t seem like a monkey tail to me but a Cleistocactus. It’s screaming for light. Usually, it likes to get outside in summer (15-40°C).
I would recommand to repot it in a bigger clay pot and cut it at 30cm high. Like this, they can grow healthier if they can have better lightning and especially if the pot can go outside.

chop and prop. this guy is actually a Monkey Tail. He wants to hang, not grow vertically. Their “bones” are not as sturdy as a standing variety, that is why it is morphing itself for weight distribution. Edit: I would love a cutting though lol
