I purchased this planned a couple weeks ago, and it has suddenly started growing from the under side of the pot. I want to repot, but I also don’t want to damage the new growth. Is it possible or I’m overthinking and should let it go?

What you can do is cut the vessel very carefully, with a well-sharpened knife. Then you will be able to replant this shoot from below.

If anything, let it grow some more until you get a node then cut right below that and water prop
Regardless of what you decide (cut the pot vs. cut the sprouts) – the plant looks very healthy and will turn out fine! 🙂
I’ve always resorted to cutting the plastic pot as I always somehow damage the sprouts. I do agree with the other person saying to let get a little bigger before transplanting for a higher probability of thriving. She’s precious!

I hear your concern, but know that most plants love to be pruned. It stimulates new growth. You could cut the pot, or you could let go of that little leaf growing out the bottom. Your plant will thrive either way.
Just make a clean cut with a sharp scissor.
MAYBE you can cut the whole thing apart with shears or a knife, and get that shoot out intact, but I wouldn’t hold my breath. It’s big and it’s in that hole pretty damn tight. And even if you did get it out, I’m not sure you can easily redirect it up the way it’s supposed to go. Seriously, it’ll be a lot less headache to cut it, root it, and replant it later.

I would say cut the pot, down the side and near the holes to get it out easier.

I would just cut the sprout. It won’t damage the plant it will be fine.
the bigger one with two leaves can easily be propagated. and the smaller one is not that big of a loss considering how quickly they grow
