I've had this string of hearts since June and the leaves are growing in much closer together now and are much fuller, but I have a few of these long, empty stalks. Will anything grow from them, or can I just trim them back to the node?

You can trim them, if you want you can prop the leggier bits to fill up your pot more/start a new pot.
Nothing will grow on those long sections without nodes.
