On this video, I harvested cucumber, bush beans, rose (for tea too), sweet potato leaves, chilies, amaranth spinach, tomberry tomatoes, and borage flowers.
I didn’t harvest all of my vegetables because I am gonna save the seeds for next year 🙂
After harvested the vegetables, I make a simple dish from my hometown, “Jukut Cantok”. Jukut Cantok is a vegetable salad that’s containing with peanut sauce. You can found them anywhere in Bali. “Jukut” means vegetables and “Cantok” means to pulverized the sauce with mortar and pestle and later mixed with vegetables.
Usually they sell “Tipat Cantok”. Tipat is some rice cake covered with coconut leaves. They mixed Tipat with boiled vegetables. Here I don’t have tipat, so I just make Jukut Cantok and eat with rice 🙂
For making Jukut cantok you need:
🌱 vegetables (we often use green vegetables such as spinach, water spinach. Some mung beans sprout, long bean, etc). Here I am using sweet potato leaves, amaranth spinach, bush bean, tomatoes. Boiled them all. And make sure not to over boiled.
🌱 roasted / fried peanuts (but here I am using roasted almond with a little bit coconut oil on it :3, because I don’t have peanuts)
🌱 chilies (the spicy level is up to you)
🌱 garlic (as needed)
🌱 coconut sugar/palm sugar (as needed)
🌱 pinch of salt
🌱 drinking water (as needed)
🌱 tauco (this is optional. Tauco is a fermented soy bean. Here I made it myself 🤣)
🌱 edible flowers (this is also optional. I am using borage and rose from garden)
🌱 Jeruk limau (Citrus amblycarpa), in the authentic recipe, they often add this citrus to make it more fresh. But I don’t have it here so I skip this one 🤣
🌱 Fried shallot (bawang goreng)
To make it, simply use mortar and pestle to grind the peanuts sauce and after that mix with boiled vegetables. Enjoy with warm rice, egg or any kind of protein you like and maybe some kerupuk (crackers). ✨
