My first San Pedros and Peyotes. Will they make it in a garden on a sunny southern slope in Germany?
Also: My aim is to grow them directly in the garden soil, not in pots. Actually, it only took one night an animal (I assume a raccoon) dig over the two super spiky San Pedros, however, they are still fine (hopefully). Do raccoons like cactus?

I don’t think they will get thru the winter, even if you live in the most southern part of Germany, unfortunately. Unless you build something that will keep them completely dry and temperatures over 5 degrees C.
I live in Netherlands, western part (Amsterdam). I keep my Trichocereus in an unheated poly tunnel for winter and most survive. We didn’t have very cold winters last years. But I don’t know how the winters here (hardiness zone 8) compare to Germany.
The moisture will probably rot them
