As my papa used to say that’s an “angry burn ya ass pepper”

  1. Because those are “actually ripe” the seeds can likely be saved so you can grow more next year! Take them out and put them in water, healthy seeds that could germinate will sink. Dry them and save them 🙂

My mom is elderly and she can’t pick her peppers. So, the last time I saw her, I picked several dozen red jalapeños. Then, I deseeded and deveined them, as to get most of the hot out of them. I then added salt and a dash of vinegar and blended them in a high speed blender. Made the best medium hot sauce with a hint of sweetness, due to them being red.

Personally I love the flavor of bicolored/fully ripened red jalapeños!

What are you talking about? I intentionally let them ripen to make sriracha

Red jalapenos aren’t spicier than green, quite the opposite to me. And not very hot at that even green.

If you want a spicer jalapeno, plant the ones bred by NM state university. NM state jalapenos are about 12,000 SHU, whereas average jalapenos are 5,250 SHU.
