That’s a cardoon, actually, not an artichoke. They are the same species, but cardoons are the wild form.
You can tell them apart because cardoons have smaller flower heads with spiky scales covering them. Proper artichokes have larger heads with blunt-tipped scales.
Cardoons with self-seed freely and are herbaceous perennials.
