For the woody cores, u/imdavesbud posted a video last year with him cutting using a flush cut saw. Works wonders!
I’ve also seen people using reciprocating saws for thiccc cuts but haven’t personally tried it (yet 🤪)

Chef’s knife.
I use my MAC knife for younger stuff and my Henckle’s serrated bread knife for older, tougher stuff.

For the big stuff with the tough cores I use a hacksaw blade.
That’s not a sp right? It’s from that other genus that turns pretty and blue and that weird flower?
Serrated Bread Knife has been treating me right lately. I saw a guy use a hacksaw for some real big ones recently.

I use my Spyderco Police 4 K390. Like butter.

Spyderco kitchen utility knife is my go to, usually prefer the non serrated unless the core is really tough

For bigger cuts I use a stainless chef’s knife.
We’ve got a kid in culinary school and he’s always bringing knives home.
I’m pretty sure I got this at a thrift store. It’s indispensable.
