I think the picture will be self explanatory. So the bag of carrots I bought are pre cut into small 2 inch rectangular chunks. I have never seen this before. The spiny part is really hard like wood but he thorns are soft and rubbery. It seems as if the carrot grew around this maybe?

    The core hardens and gets fibrous on larger/older carrots that are often processed into smaller sizes.

    Sometimes the inner part of the carrot develops like this. Maybe it has to do with the plant’s development stage, e.g. when it’s about to seed. Let’s hope someone else can clarify.

    As a child, my parents cut big carrots into big strips for me to eat as a snack,and I loved to eat only the outer layer first and seeing the tiny spikes on the core before eating it.

    You found the root of a very old carrot. Let me put it this way. Carrots are harvested “prematurely” aka before they produce flowers. When a carrot does produce flowers the core of the root essentially hardens into a solid mass. While still edible it is very woody and tastes similar to the carrots wild ancestor, Queens anne’s lace.

    I eat raw carrots a lot. This looks like a carrot 🙂 it’s easy to see when eating raw but they have an inner core/stem? Throughout. I tend to eat the outer part then the inner…..

    This one looks a bit tired
