Chicken Caprese Pasta
4 large peeled tomatoes. 3 grated, 1 coarsely chopped
2 cloves garlic, finely minced
1-2 t. Kosher salt
1 t. Sugar
4 T. Olive oil, divided
1 lb. fusili pasta
2 boneless skinless chicken breasts, cut into bite sized pieces
Black pepper
1 c. balsamic vinegar
3 T. brown sugar
8 oz. fresh mozzarella, torn into bite sized pieces
¼ c. fresh basil, chopped
In a fine mesh sieve strain grated tomatoes. Transfer grated tomatoes to bowl. Add garlic, salt, sugar and 2 T. olive oil. Let marinate until ready to use.
Pan fry chicken pieces with a little drizzle of olive oil and salt and pepper until its cooked and has nice color.
While frying the chicken, cook pasta until al dente, about 9 min. Strain and add back to the pot.
Pour tomato mixture over pasta. Toss until well combined.
Assemble: Add your tomato pasta mixture to plate, top with chicken, fresh mozzarella and torn basil. Drizzle balsamic glaze over the top!
If you would like to make balsamic glaze here are the instructions! In a small pot, bring vinegar and brown sugar to a boil. Whisking and scraping the bottom of the pan to prevent sugar from burning. Reduce heat to medium and cook, stirring occasionally, until thickened, about 12-15 minutes.

I cut a few leaves off the bottom early on for the tomatoes but have not pruned them of pinched suckers and they are much healthier this year. We are in a drought so there is less moisture on their leaves to spread blight but I definitely see a difference for the better in the health of the plant.
Thanks for sharing your children with us. Always such a joy for us elderly whose grandchildren are now adults. Great to see Monica as well; love seeing sisters together.

Good morning! How do you get such beautiful tomatoes? Seriously, I’ve got 2 tomato plants in huge pots and I’ve amended the soil. I still had all my tomatoes get blossom rot. The tomatoes themselves are small. I’m thinking of not planting any tomatoes next Spring but I love how home grown taste. What am I doing wrong??

My little Dutch town in Iowa has flower lanes along the street throughout town and pots hanging along the manmade canal. It really brightens a town to see all the beautiful flowers.

As always, everything looks so beautiful. I think the sedum will be fabulous by the phlox! The recipe looks delicious, but in the video it appears you used a much smaller amount of white sugar rather than the 3 tablespoons of brown sugar that you included in the written recipe – can you clarify? Didn't realize my sedums that I planted last early Fall were getting too much water this summer from our sprinkler system so I had to move them recently.

When I was growing up my dad never once staked a tomato. I honestly I don't think anyone I ever knew did and sometimes I wonder why I bother. I think I am done now. Yours feel like home to me.
