So I want to make most of my peppers into a hot sauce but I don't know if I'll get enough before they go bad after I pick them (Google said 2 weeks in the refrigerator if that's wrong let me know)

    Never kept peppers in the fridge, not even store ones? They usually last long enough for you to gather the entire harvest off a plant… If not overripe now, they can even make it on the counter. If they’re thin walled they’d start dehydrating little by little and probably won’t rot before that.

    Nothing wrong with drying them either…they’ll be just as good for your hot sauce.
