More light! it’s amazing how fast they can grow with lots and lots of light.

What do you mean exactly? Looks like Echeveria ‘Domingo’. It’s a large growing plant… and echeverias flower yearly. The number of infloresences per plant depends on the variety, some produce more than others. Hybrids in particular tend to flower more often, especially if the respective parents flower in different seasons.

Some echeveria cultivars are quite robust and grow entire new sets of leaves in weeks or months if provided proper care. One example is Echeveria elegans aka Mexican snowball. This was what mine looked like when I got it 2 months ago (it was a lil etiolated and sad from its time at the garden center):
