Did you know sweet potato leaves are edible?

Am I eating [ __ ] leaves? Yeah, but not just any leaf. Sweet potato leaves. Oh yeah, if you didn’t know, sweet potato leaves are edible. They’re actually a good source of vitamin A, C, and B6, as well as ribboflavin, thamin, folic acid, niacin. They’re rich in antioxidants. They’re full of minerals like calcium, magnesium, manganese, and zinc. You can sauté them, stir fry them, put them in a salad. I think they’re kind of bitter, so I like to put them in kind of like a meal. Mix it up like spinach. But please do not get these confused for regular potato leaves. Regular potato leaves are toxic and they can be deadly. They have something called solonine in them. You don’t want to get salonine poisoning. It’s really easy to tell the difference. This is a regular potato leaf. Don’t eat that [ __ ] The bigger leaves that I’m holding in my hand now, those are the ones that you want. And I grow these every [ __ ] year. I get sweet potatoes from the grocery store. I put them in the ground. They grow these leaves. I eat them. And then I eat the sweet potatoes later on in the season.
