MILAN, Ill. (KWQC) -With summer in full swing, vegetable gardens across the QCA are hitting peak production. But knowing when and how to harvest can make all the difference when it comes to flavor, shelf life, and even plant health.

Emily Swihart, University of Illinois Extension Education Horticulturist, shares expert advice to help local growers get the most out of their summer crops. Timing, handling, and observation are key.

Morning is best

Produce harvested in the early hours retains moisture and crispness. Keep harvested vegetables out of direct sun and cool until ready to store. Swihart also recommends harvesting only when plants are dry—wet leaves can promote disease spread.

Gentle handling matters

Damaged produce or plants are more vulnerable to pests and pathogens. Use a knife or pruners for stubborn veggies and avoid piling produce too high, which can lead to bruising. And don’t tread on vines during your harvest.
