My pocket prairie mainly consisted of blanket flowers, some basket flowers, and lemon bee balm, which all seem to have died back and maybe gone to seed? Is this ready to mow now or should I wait longer? How do I know if it’s gone to seed? Located in Austin (zone 8b). Thanks!

Nice prairie. I would see if your local fire department allows yard burning and let your neighbors know dates and times for burning. Make sure to read up about it to lessen risk (humid day, 1-5 mph wind, some volunteers to help)

Do you have an in season picture? Interested to see what it looks like at its peak

I’d think you should weed whack, leave 8-12 inches of stubble

What is the purpose of mowing it right now?

Thinking bigger picture, you’ll definitely want to add some diversity in there, so that things bloom throughout the year. Also pollinators can visit any time and you will have more options for them and maybe even some host plants.
