Blackberry Cheesecake Ice Cream

Blackberry Swirl

4 c. Blackberries
2 T. lemon juice
2 T. cornstarch
⅔ c. sugar

Combine all. Simmer over med-hi heat. Mash. when thick remove from heat (5-10 min.). Run through fine mesh sieve. Refrigerate. 

Cheesecake Custard

3 c. Whipping Cream
2.3 c. sugar
5 egg yolks
1 t. Vanilla  
8 oz. cream cheese, softened. 

-Beat cream cheese until fluffy and smooth, set aside. 
-In another bowl, whisk egg yolks. Set aside. 
-In medium saucepan combine cream and sugar. Cook over med-hi heat. Stir until it just starts to bubble around edge of pot. Reduce heat to medium. 
-Pout ¼ of the hot cream into eggs, whisking constantly. Slowly add ¼ more of the cream, then pour egg mixture back into saucepan with hot cream. Stir until it it starts to thicken, about 10 minutes. Run through fine mesh sieve into bowl with cream cheese. 
-Whisk until smooth. Place bowl of custard in ice water bath until it comes down to room temperature, then add 1 t. Vanilla. Refrigerate for at least 6 hours. 
-Once chilled, churn in ice cream maker for about 25 minutes. Place ice cream in container and freeze overnight (or for several hours). 

Graham Cracker Crumbs

1/2-1 c. graham cracker crumbs
2 T. brown sugar
2 T. melted butter. 

Combine. 

ASSEMBLY

In loaf pan layer ½ of the ice cream, ½ of the graham cracker crumbs, chunks of cheesecake (optional, i used pre-made, store bought cheesecake for this), and ½ of the blackberry swirl. Repeat layers one more time. Freeze again for 4 hours.

  4. Have you ever heard of flower pounding? A friend showed me recently with denver daisies but sun flowers might be a great option! You put the flower head between pieces of flower sacks. It was amazing!

  15. The Potatoes are amazing. Have you had to weed the potatoes too? My first time planting potatoes this year, armed with the knowledge from watching you. I opened a bag in May that was all rooted and sprouted up and thought it must be a sign, so I planted 25 hills! Thanks for all you do and share❤

    Question-do you put anything in your fountains to prevent algae from growing in them? We have a fountain and no matter how much I clean it-once a week, there’s just no way to keep the algae out without adding some type of chemical. I’m hesitant because the base is on the ground and the dogs love drinking out of it. Even though they have fresh water 10 feet away. I’m about to the point where I think we just need to replace the type of fountain so they can’t drink out of it and I can add chemicals to keep the water clean.

  20. I have one of those recurva Larches too, we call it the grinch tree as it reminds us of Whoville. it’s about 15’ tall and its my favourite tree. The fall color is stunning!!
