One of the reasons why green peppers are not turning red or ripening on the vines, its the side shoots..
The side shoots is located between the leaf and the main stem. It’s an extra grow point that will grow into a new whole pepper plants .
The side shoot takes away a lot of energy from the plant and it takes a long time to grow and this could slow down the ripening production of the bigger Peppers below. It’s good to remove the side shoots to speed up the ripen process..
If winter Is coming to your area , prune off all side shoots and cut off the tops of your pepper plants for a faster ripen up ..

reason why your peppers are taking forever to turn red on the vines and sometimes you realize you have full-size green peppers and they’re not turning red especially your bell peppers you think your bell peppers are stuck and maybe they’re not turning red I’m going to show you exactly the one thing that’s causing this problem one reason is this right here this section right here between your leaves and the main stem you’re going to have an extra growth point this is called the side shoots that will grow between the leaves and the main stem this is your biggest problem when you want to ripe a pepper plant before removing the side shoes on the pepper plants you must understand this so you do not make any mistakes especially everybody garden zone is different now if you’re living in a Hot Zone you do not want to PR oute all of the side shoes if you’re live in a Zone where Winter is Coming you want to pron oute all of the side shoes the side shoes will grow into another pepper plants producing Peppers over a long time lots of peppers so you could get like maximum production of big production but if you’re coming out to fall time we cannot let that happen once the plant is growing in the cutes it takes away most of the energy in the side shoes and leaving all the big green peppers to basically stuck them right there they’re just going to remain there for a long time until the side shoots are finally growing that’s why it’s going to take a long time and if you’re coming out the winter time you do not want to let the side shoots grow because you’re going to stuck with all green peppers nothing is wrong with green peppers but if we want to get that better ripe red flavors or even yellows or purple or whatever you have to ripen them up on the vine so if you live in a Zone where you have a longer Garden time and your plant is about 4T remove 2 feet of the Lower Side shoots and leave the top the all the energy is going to focus on the top and it’s going to continue growing at the top all the peppers in the bottom is going to be ripened up and you’re going to have a bigger production overall in a longer time but if you’re in Long Island New York like me we have to remove all of the side shoots but I’m going to tell you something right now when you remove all the side shoots you have to come back every 2 to 3 days because pepper plants will keep producing side shoots nonstop and it will still take away the energy from riping up your peppers for example here I remove all the side shoots I even tap off the plant but come back here within another couple days look you see we got a new sets of leaves right there and it that’s this was a leaf and as a Main St that’s another side shoot we cannot let them continue growing no way if you’re living in long summer garden you live in winter live in Fall wherever you’re going to be experienced remove all these baby leaves do not give them a chance to grow they are going to distract all the energy from the plant you see this one right there it’s ready look at this look at the bottom you see how the bottom it’s not fully uh ripen up at the bottom but this is this is what I like this is how I like to harvest my Peppers semi ripen right here this is 3/4 away this here the pepper is more crunchy and delicious trust me and you leave this on your counter top it will ripen up within 2 3 days it lasts a longer Time by harvesting this right now our plants going to use more energy to ripen up this one instead of using energy to ripen up this one it will grow the smaller one and ripen up the other one faster here look we got lots of little leaves are going to grow and these are the cow horn you got to pick them look at them you have to harvest these Peppers you want to make sure relieve the energy from the plant let the plant keeps growing the other green one burn them ripes and grow all the small ones you have to pick them but what I did I topped off so much uh growing Point here but you can see look they’re still growing here these small one right there if you have flowers and you’re coming on the winter time this is not going to make it it just takes away the energy from the plant because look we have smaller ones have to grow and they have to turn ripe and now look we have some ripe ones so what do we do we pick them we cannot weit too long that one just fell we cannot even if they’re orange look go ahead and pck them they’re red any question comment below I always try to answer your question and follow my tips and ripen up all of your peppers right on the I like your gardening tips. I have experienced my peppers not turning red and wondered why🤔
This was my first time when I planted yellow bell peppers from seeds. The plants grew vigorously and the first few peppers on the plant did change from green to yellow. The rest of the peppers remained green. Next year, I will clip out the side shoots and see if your theory works for me. I am in Southern Ontario, Canada. The first peppers were 100 % healthy. The rest of them looked green but healthy on the outside. But discovered that inside, they had maggots. After finding this out, I inspected the peppers and found tiny pricks that had grown shut on the outside. I assume that that's where the fly pricked the skin of the pepper and injected its eggs into the flesh of the pepper. The eggs evolved into larvae that fed on the flesh and grew into full sized maggots, which destroyed the peppers from inside out. What should I do next year to prevent this from happening?

I'll be looking at peppers for small ones. We reuse our soil too with 1/3 bucket compost and fertilize. Most are ready. No anticipated rain last night. 5 min ago thunder 2 drops of rain. Sun is shinning. Have a great rest of the day and week ahead.

Did this with my bell peppers and they are all still green. I'm in Zone 5. I did notice this morning that one of the bell peppers has a tiny bit of black on it, so I'm hoping it is starting to turn color for me!! My Jimmy Nardellos have FINALLY started to turn red. And we've gotten 2 garden salsa pappers to start turning red, but they started going soft so we had to pick them and use them as they were. I accidentally topped on of my garden salsa pepper plants early on this year. So I took the top and put it in a jar of water, under grow lights and in front of my french door, the side that we don't ever open. It never grew roots, but it did produce flowers and 2 very tiny peppers, one of which turned completely red. This is out first year growing peppers of different varieties other than jalapeno and serrano. We grew those as well, it was just our first year growing the bell, the Jimmy Nardello and the Garden Salsa peppers. I plan to expand next year and grow more varieties. Anyone have any suggestions of peppers we might like to grow next year? We don't do the really hot peppers. My husband makes salsa, and he fell in love with the Garden Salsa peppers. I haven't been able to pan fry a red Jimmy Nardello yet, as we don't have an all red one yet. I know it is a sweet pepper with no heat. I bought a package of rainbow bell pepper seeds, and was hoping to get a purple one out of the 4 plants that made it. We will see, as there is only the one that has a tiny bit of blackish color change on it!!

I showed back up to flex about keeping ALLL MY side shoots to MULTIPLY My yields. In fact, I INCITE THEM by pruning harshly…. HOWEVER, for folks who have fruit, but winter is quickly knocking on the back door, THESE ARE ANCESTRAL levels of gardening wisdom (for those who have the capacity to listen with a dekollonized ear)!!!
So picking the green pepper plants 3/4 ripened is better than fully ripened? Does it hurt it at all?
This is best pepper year I ever had. I grew them in greenhouse for first time and wow what a difference it made. Never had them turn red like they have been this year. Usually I have to pick them green or just getting hint of red.

A few days after doing the tomatoes I started wondering about the peppers. I have king of the north red peppers, orange blaze and jalepenos. So I topped them too, and low and behold, they are all ripening! Now I need to go hunt those side shoots

Great advice. Unless you trim the plants they will continually produce greenery and tiny peppers until the first frost. NJ zone 7a.
