The overwhelm is real. Digging out my garden to turn it into a pallet/grow bag garden, setting up trellises, seeds, seedlings, planting, bag after bag of compost and topsoil..all whilst balancing being home with 2 small children on the spectrum. And my ADHD mind is melting down. 2 days ago I was trying to put up an arch trellis on my own and it fell on me. And I just sat on the ground and cried.
But, you pick yourself up, make a coffee, and carry on. I have to believe that I will see the fruits of my labour, and that I'm in my legacy building era.❤ from Canada.

I love leeks almost better than onions. I grew up anticipating spring and ramps aka wild leeks in the north. When I moved down south, using the bigger leeks was my best option. I use them in almost any recipe where you would use onions. My favorites are potato and leek soup and fried potatoes with leeks. Yummy! Leeks are also great in potato salad. They're also good dehydrated into a powder to add to any spice mixes that call for onions. They give a kind of softer, sweeter flavor than onions which makes a nice change from stronger onion flavors sometimes.

Literally started raining whole I had about 10 min of garden time. I shoved the overgrown tomatoes in between the hardware cloth. That's it. I'm back inside the house. 😂 BTW my hands smell like tomato. ❤

LEEK recipe – from Turkey
Hey, I live in Turkey and its pouring here too! I love how they make leek here:
In a large pot, Saute a medium onion in olive oil. Add 4-5 chopped carrots and 4-5 cloves garlic. Simmer. Add 2T tomato paste. A couple handfuls of rice. Fill the pot with chopped leek, large pieces cut on the diagonal. Add 2 cups of broth and cook until tender. It's good when it's cool. With fresh lemon.

Your opinion. I live in Salem Oregon zone 8b. I planted my tomatoes and was wondering if night time temps in the mid to upper 40s at night, will these temps stunt my tomatoes? We don get 50 temps till June. Should I be covering them till we reach consistent 50 degree night time temps? Daytime temps are warm. Upper 60s & 70s. The nighttime temps in the mid 40s is only for an hour at most around anywhere between 4 AM or 6 AM.

Leeks are really good in zuppa toscana!
Other than potatoes and leek soup, this is my usual recipe…
Roasted leek
Ingredients
* 6 leeks
* 3 tablespoons olive oil
* ½ teaspoon kosher salt
* ¼ teaspoon black pepper
* ¼ cup Parmesan grated
Instructions
* Preheat the oven to 425°F.
* Trim the hairy bottom of the white part of the leeks. Trim the dark greens, leaving the white and light green parts.
* Cut the leeks in half lengthwise, then rinse them well (there’s often dirt trapped in there) and dry. Arrange them in a 9 X 13 baking dish, cut side down.
* Drizzle the leeks with olive oil and use your hands to coat them thoroughly. Sprinkle them with salt and pepper.
* Roast them for 20 minutes. Remove from the oven, turn so that their cut side is up, and sprinkle with the Parmesan. (Or cheese of your choice )
* Continue roasting until the leeks are fork-tender and golden brown, 5-10 more minutes. Serve immediately
Our local store ran by a family member just gave us probably about 15-20 lbs of bananas yesterday "for the pig". I made three big loaves, 8 mini loaves, and 3 dozen muffins and still have a triple batch of batter in the fridge and more bananas to use.
