What are some options for converting these two areas from grass and mulch? Something that isn’t going to be invasive but also hearty. The area next to the gravel road struggles in the summer, but gets a lot of water in spring.

I would sheet mulch the portion that is currently lawn and start researching some perennials. If you’re lazy like me, focus on perennials that spread, by rhizome and by seed in the wind, and your — say — 3 patches of yarrow will soon become many more, or even a carpet of it. Watch for volunteers that pop up. Identify them. Decide if you like its growth habit, appearance, etc. Leave volunteers you like that are not *listed* invasive *by your local authority* — forget what others think about “weeds.” Only YOU and your local authority decide what are weeds (you) and invasive (the local authority), nobody on this sub.
Be sure to remove those you don’t like before they fruit/go to seed.
Check under your current mulched bed to see if there is weed barrier and *get it out* if it’s there.
Think of the mulch as a blank page, and build a new plant community over it. Look around your neighborhood for plants others have that are doing well and consider including some of those.
