jade plant leaves turn red from high UV exposure – basically like a tan/sunburn but not harmful to the plant. she does look thirsty though, shes probably due for a good and thorough soak when the leaves are wrinkly like that

Yes bottom water is fine. If your leaves are squishy when you pinch them it needs water. They should be nice and firm.
Do those bumps you’ve pictured in another comment come off easily? They kind of look like scale to me.
This is my jade plant in full sun. It has red edges and the leaves are plump due to the rain. The leaves have marks because of hail. Once the leaves get a little soft it’s time to water again. The leaves are shiny when plump and dull when they need water. I don’t know what the bumps are on your plant. I’ve never had scale on my plants so you might want to learn about that and how to get rid of it.

That does not look like scale to me. Jade is a succulent and stores water in the stems, leaves, roots or even fruits. Plants which store water in their leaves and stems also have a thick waxy skin so that they lose less water by transpiration. With age, stems will become brown and hard like a tree trunk. It’s called corking and perfectly normal.
