Hi , I live in Melbourne Australia and just moved into a place and this is the state of the backyard. I just removed heaps of weeds.
I’m wondering what should I do here? Try rip out this grass and lay turf?
Or can I get away with putting seed? If so, what do you recommend?
I think things need to get level too.

You’ve nothing to lose. Now is the time to level. Get rid of the existing vegetation (mechanically or chemically), add any soil amendments appropriate to your soil, and make it smooth. Account for drainage.
Sod is an instant result, though you need to be prepared to water appropriately. Seeding is also an option.
Whatever route you choose it’s going to be so much better and you’re going to be thrilled with the results.
