Located in Houston TX. Apologies in advance for the extremely beginner level question lol. I had concrete squares here before and just want grass. How would you recommend filling in these holes? Just add top soil then sod? Pretty sure it's St Augustine.

Sod or just dump soul, level, seed, rake again, and water well.
Probably sod
Stone squares.
You can either wait or get some sod
If you’re waiting loosen up the soil, get the level right, it looks like you need to add some soil, do a 50/50 corse washed sand and compost, fertilise and water to speed things up as much as possible.
It looks like st aug is there, so it will fill in eventually. Also looks like a bit of mix with some weeds thrown in but hard to get a good idea from these photos.
If you’re doing sod you might not need to ad soil, but you’ll need to check your levels, test fit a bit of sod to see where it comes to, ad or remove material to get it flush at the soil level.
Saint Augustine will naturally fill that in by the end of summer with just normal watering. You can already see the Saint Augustine runners beginning to stretch across the holes.

I would remove all of the grass in the block and ReSod.
If you wanted to get real fancy you could dig out the grass that divides the squares and make a flowerbed with mulch or whatever

I made a franken-sod from the grass that encroached over my patio blocks. took 2 seasons to make enough sod from the overhang. but you can’t tell there used to be blocks there.
loosen the soil that was underneath the blocks, add or remove soil so the sod is level with its established neighbors
With concrete pavers.
A plug or two in each.
Put some potting soil and plenty of water. It won’t take long for St. Augustine to spread across the squares.
I would 100% sod it and be done with it. There’s one thing others might be taking into consideration. Those areas are sunken in an inch or two. If you just let the grass just spread on its own, there will be depressions in every single spot. Sod comes with an inch of soil attached to it. It might make it perfectly level with the rest of the grass. Now, you might need a few bags of dirt to raise to 0.5-1 inches up, but sod should fit nicely. Another option is filling the depressions with soil and plugging it, but sod would be so much easier and quicker. It would be filled in and you could be mowing that area in 4-6 wks instead of an entire growing season. Even if have a little 2×1 ft area that needs filling in, sod and done.
Bro just wait it out. Throw some fert on er, give it some good ole h2o and you won’t even notice it next spring

2×2 pavers
If it’s St Augustine, let some runners cross a few times then dump some top soil on them. Walk away and don’t look back.
