It is called a callus culture and it’s basically a blob of plant stem cells that can grow into whatever tissue they decide- roots, leaves, stems, whatever. I’ve never seen them grow outside of artificially controlled lab conditions, so this is really cool! Did you add some rooting serum or growth hormones?
I’d keep growing it, it eventually will differentiate and develop new roots and stems, but the results may be unexpected. Good luck and I’d love to see followup photos!
