I mean it is extremely stressed, some type of Brassica oleracea. It is about to flower and go to seed, so why not harvest the seeds and grow some more!

weed and vegetable are made up terms. Weeds are any plants people dont want in their yard and vegetables are plants humans have decided to eat. Theres no rules to it really, so that plant can be either depending on how that see it

Thank you for the help everyone! This has been incredibly educational! We are new planters so we appreciate the help. We are going to let it continue and then harvest the seeds, as suggested in the comments. If anything, the flowers will be good for our local pollinators.
Edit 1: Definitely stressed, unfortunately most of our plants are right now. Our area has been bouncing between freezing temperatures one week and then 70s the next. We try to cover or bring plants under our plant lights, but not sure if that’s helping or continuing to stress them out. If anyone has any passing advice on this, that would be amazing!
Edit 2: Thank you guys on the weed education. We know that weeds are plants just like vegetables and fruit (and some weeds are even edible like dandelion tea!). Weed is a blanket term, I was more just trying to quickly condense the title. It’s our running joke more than an accurate description (:
